I've found some lower-sodium hominy (about 2/3 the amount as in the other brands for the same quantity). Would that decrease the overall sodium numbers for this recipe? [I do know that your guidance tells you to rinse it anyway.] Thanks it looks terrific and am rating it based on how I believe my client will like it. Dietitian comment: Yes I estimate the sodium will be around 75-100 mg lower per serving.

If I substituted Portobello mushrooms for the pork, what would happen to the sodium level? Thank you. Dietitian comment: If you use 6 medium portabella mushrooms the sodium is about the same. Most of the sodium comes from the hominy.

Really good...I did add 1 tsp. each of cumin, oregano and crushed red pepper as my son likes posole spicy. Will the added seasonings change the potassium/sodium levels?Dietitian comment: No, the added seasonings will not make a significant difference.

I finally made this last night (11/21/11) and it was tasty. I wanted to add salt to it but I resisted. Very different than what I grew up eating, but then again, that's why I'm here getting the help I need. Thank you.

This is like a mild white chili. I have never eaten hominy. It has the texture of beans, which I can no longer have. I realy enjoyed this.
